This healthy breakfast recipe is ideal for people with Celiac disease, or those who hate to start the day with a heavy, flour-loaded breakfast.

Breakfast is the ideal time to introduce protein into your diet. This gluten-free recipe includes protein and fruit, two essential for a well-balanced diet, and is a great breakfast to give your children before school.

Simply beat 3 eggs in a bowl. Use a hand mixer or blender, mix 3 bananas and a pinch of salt into the beaten eggs.

The rest of the cooking experience is identical to any other pancake preparation: add a small amount of oil or cooking spray to a pan; pour in the mix, turn the pancake over until both sides are a golden yellow, serve and enjoy!

Just serve the pancakes with fresh fruit or modify this healthy breakfast recipe by rolling up the banana pancake or by filling them with fruit, like a crepe.

In my book The Step Up Diet, I emphasize the importance of protein in every meal, especially early in the day. Consuming protein and fruit for breakfast gives us more energy and stamina, and helps us avoid snacking in between meals.

I adopted this healthy breakfast recipe from my daughter, and prepare it very often. Thanks Natalie!
